When we pulled the engines out of our 1972 28' Sports Express we found a couple of the lag screw holes were stripped out. What's the best way to fix this? A local boat shop recommended drilling the holes oversize and filling them with an epoxy/chopped fiberglass fibers mixture. Then drill new holes for new lag screws. Has anyone done this? Thanks.

Yes I have. It can work if the stringer wood is not soft or rotten. You can also drill them oversize and epoxy hardwood dolls in. But, if the wood surrounding is soft, no dice ! Look up the rot doctor for ideas on repair.

Honestly, I doubt you will find any rot. Don't see much of it in this location unless water was leaking in on them somehow. You might also find sharper beefier lags.
@STERLING SHRIBER answer is the best. Oversize and put in epoxy dipped wood dowles. Cut flush and re drill.
